ALBAIDA HONEY AND BUTTER COOKIES

INGREDIENTS
· 250g plain flour
· 250g icing sugar
· 250g butter
· 3 tablespoons “La Obrera” Albaida Honey
· 2 eggs
· 1 teaspoon “four spices” (typical French ground spice mix with ground pepper, cloves, nutmeg and ginger)
METHOD
· Beat the butter until smooth and pale. Add the “La Obrera” Albaida Honey and stir in until combined. Add the icing sugar and 1 egg and continue mixing until combined
· Add the flour (reserve a little), mix and then knead the resulting dough by hand. Cover the bowl with a cloth and put it in the refrigerator
· Remove the dough from the refrigerator, add the teaspoon of “four spices” and knead a little more
· Sprinkle a little flour onto a smooth surface and roll out the dough using a rolling pin. Use a cookie cutter to cut out the cookies and put them on a baking tray lined with baking paper
· Glaze the top of the cookies with beaten egg and bake them in a preheated oven at 200°C (180°C fan, 392°F or Gas Mark 6) for 12 minutes
